This sunny lemon bundt cake is just the dessert to brighten up any day. I have been looking forward to Spring to arrive and lemon is just one of those flavors that reminds me of spring and summertime.

The lemon peel provides a nice zing in every bite. The thick cream cheese frosting gives the golden cake an extra moist and delicious flavor. Another great thing about this recipe is that it can be made ahead, because it stays moist for at least a few days.

Ingredients (Cake)

  • 3 -6 Lemons
  • 3 cups All Purpose Flour
  • 3teaspoon Salt
  • 1teaspoon Baking Soda
  • 2 cups Granulated Sugar
  • 1 cup Butter, softened
  • 4 large eggs
  • 1 teaspoon Vanilla
  • 1 cup Buttermilk
  • 3 tablespoons Lemon Juice
  • 2 tablespoons grated Lemon Peel

Directions (Cake)

  1. Preheat oven to 325°.
  2. Grease and flour 12-cup bundt pan.
  3. Cake:.
  4. From lemons, grate 2 tablespoons peel and squeeze 3 tablespoons juice.
  5. Mix flour, salt and baking soda.
  6. In bowl with mixer on low speed, blend sugar and butter. On high, beat 3 minutes.
  7. On low, beat in eggs, 1 at a time, and vanilla.
  8. Beat in flour mixture alternately with buttermilk.
  9. Fold in peel and juice.
  10. Spoon into pan.
  11. Bake 60 to 70 minutes or until cake tests done.
  12. Cool in pan 15 minutes, then invert onto rack.

Ingredients (Frosting)

  • 2  cups Confectioners Sugar
  • 1cup Butter, softened
  • 4 ounces Cream Cheese, softened
  • 2 tablespoons Fresh Lemon Juice
  • 1/2 teaspoon Vanilla Extract

Directions (Frosting)

  1. In bowl, with mixer on low speed, blend sugar, butter and cream cheese.
  2. Beat in juice and vanilla.
  3. On high, beat until fluffy.
  4. Spread over cooled cake

He Walked Into An Abandoned Church. Then? A Miraculous Thing Happened!

This is truly one of the most miraculous stories we have ever shared. At age 57, a man living in Minnesota named Greg Thomas, was diagnosed with stage 4 cancer. He was told by the doctors that he had only a few months left in his life. His family was also told to start planning his funeral.

To deal with all the stress, Greg liked to walk around the countryside with his dog everyday. One day, he decided to take a different path and ended up arriving at an old, abandoned church. He sat down on the front steps and prayed for a miracle.

When he got up and started to look around, he felt the church needed repairing. Knewing how he didn’t have much time left, he wanted to do something meaningful before cancer takes him away. As he restored this church little by little, something miraculous began to happen to his body.

Puppy’s Trying To Keep His Eye On Baby, But When THIS Happens, Everyone Melted

Babies need lots of naps, and lots of protecting. This little pup instinctively understands as he is doing his best to watch over this tiny little baby. The problem is, the little pup is getting pretty tired himself. He does his best to stay awake, but just can’t manage. Thankfully, his Daddy caught on tape the precious spot the little puppy decided to rest his head. No doubt these two will be best friends for years to come.


Shelter Dog “Selfies” Help Them Find Forever Homes

The Humane Society of Utah, an animal rescue and adoption organization in the U.S., is back with more wonderful shelter dog photobooth pics. Their ongoing project was started with the intent of casting these dogs in a more positive light to help them find forever homes.

With the help of pet photographer Guinnevere Shuster (a professional photographer who also helps black dogs get adopted), the Center aims to show these dogs the way they’d really look if you allowed them into your life – out from behind the metal bars that contain them at the shelters they live in.

These photos capture these dogs’ individual personalities, and it looks like the approach works – the dogs that get the photobooth treatment get a lot of attention, and many of them get adopted as well.

Delicious doesn’t have to be complicated. And it doesn’t have to be made “from scratch.” This to-die-for skillet blackberry cobbler uses simple ingredients (even a refrigerated crust) but tastes as good as any cobbler you’ll ever eat. Since it uses frozen blackberries, it is a dessert that can be enjoyed year round.

This is the cobbler my Great Grandma made and all those after her. It is the best by far. It looks complicated, but it’s not. It looks delectable, and it is!

Don’t make this in anything but a big black iron skillet ~ it won’t turn out the same!

And note, place iron skillet on baking sheet when baking. Don’t use a skillet that has not been re-seasoned since being used for meat or anything requiring strong herbs or seasonings.

Ingredients for Skillet Blackberry Cobbler

  • 1 box of 2 refrigerated pie crusts (I prefer Pillsbury)
  • 2 (14-16 oz) bags frozen blackberries
  • 1 stick butter, melted
  • 1⅓ cups sugar (for berries)
  • ½ cup flour
  • ¾ cup sugar (for crust)
  • ½ stick butter, cut into small cubes
  • ½ cup water

Instructions for Skillet Blackberry Cobbler

  1. Heat oven to 350 degrees.
  2. Unroll one pie crust and place in bottom and up sides of 12 ” cast iron skillet.
  3. Pierce bottom and sides of crust with a fork.
  4. Bake 7 minutes; remove from oven.
  5. Increase oven temp to 400 degrees.
  6. In a large bowl, mix melted butter, 1⅓ cups sugar, and flour.
  7. Put berries in bowl with butter/sugar/flour mixture; toss until berries are covered and mixture is crumbly.
  8. Gently pour berries into skillet; sprinkle water over berries.
  9. Unroll second pie crust over top of berries, sealing at the edges of the skillet.
  10. Scatter the small pieces of butter on top of the crust.
  11. Sprinkle ¾ cups sugar on top of crust.
  12. Cut tiny slits in top of pie crust.
  13. Bake approximately 45 minutes or until bubbly at edges and beginning to brown on top.
  14. (I highly recommend a pie shield to keep edges of crust from burning.)

Serve with vanilla ice cream or whipped cream.

Replace Noodles With Zucchini To Make This Deliciously Healthy Zucchini Lasagna

I’m not on any specific diet, but I’m always looking for little ways to make meals healthier. Using zucchini in place of noodles is a great option for folks on diets or who are gluten-free (like my wife). The zucchini removes some of the carbs from this dish but it does not remove the flavor! If you’ve ever had a zucchini dish like this then you know what I’m talking about! Be sure not to skip the first step of grilling the zucchini strips as they can be very watery and this might ruin the whole dish if left un-grilled. Otherwise, just follow these steps and enjoy an amazing, low-carb meal.


Replace Noodles With Zucchini To Make This Deliciously Healthy Zucchini Lasagna

Cook Time: 30 mins
Total Time: 1 hr 10 mins
Makes: 8 servings

Deliciously Healthy Zucchini Lasagna Ingredients

  • 5 medium zucchini (2 lb.)
  • Olive oil cooking spray
  • 1½ teaspoons kosher salt, divided
  • ½ teaspoon black pepper, divided
  • ½ teaspoon garlic powder
  • 1 tablespoon olive oil
  • 1 lb. 85% lean ground beef
  • 1 tablespoon minced garlic
  • 1 (15oz) container whole milk ricotta cheese, room temperature
  • 2 large eggs
  • ½ cup (packed, 1oz) chopped fresh basil
  • 1⅓ cup no sugar added marinara sauce
  • 8oz part skim mozzarella cheese, shredded

Deliciously Healthy Zucchini Lasagna Instructions

  1. Preheat oven to 350 degrees F. Slice the zucchini lengthwise, into ¼-inch-thick strips, getting 6 slices out of each zucchini. Spray the zucchini slices with olive oil coking spray and sprinkle with ½ teaspoon salt, ⅛ teaspoon black pepper and ½ teaspoon garlic powder. Grill the slices, in batches, 2-3 minutes on each side, or until golden and firm – not browned and crisp. Spread on clean kitchen towels to soak up more moisture.
  2. In a large skillet, heat the olive oil over medium-high heat, about 3 minutes. Add the meat, the minced garlic, ½ teaspoon kosher salt and ¼ teaspoon black pepper. Cook, stirring with a wooden spoon to break up the meat, until meat is browned, 5-7 minutes. Drain into a colander, then mix in a bowl with 1 cup marinara sauce.
  3. In another bowl, with a fork, mix together the ricotta, eggs, basil, and the remaining salt and pepper.
  4. Assemble the lasagna: Spread ⅓ cup of the marinara sauce on the bottom of a 9 X 13 baking dish; Top the marinara sauce with a layer of zucchini, then a third of the ricotta mixture, a third of the meat mixture, and a third of the mozzarella cheese; Repeat, arranging the zucchini slices in the opposite direction: zucchini, ⅓ ricotta, ⅓ meat mixture, ⅓ mozzarella; Repeat one last time, adding one extra layer of zucchini: zucchini, ricotta, meat mixture, more zucchini, and mozzarella.
  5. Bake, uncovered, until the cheese is golden, about 30 minutes. You can finish by broiling for 2 minutes on high to brown the cheese, if you wish.

One day, the father of a very wealthy family took his son on a trip to the country with the express purpose of showing him how poor people live. They spent a couple of days and nights on the farm of what would be considered a very poor family.

On their return from their trip, the father asked his son, “How was the trip?”

“It was great, Dad.” “Did you see how poor people live?” the father asked. “Oh yeah,” said the son.

“So, tell me, what did you learn from the trip?” asked the father.

The son answered: “I saw that we have one dog and they had four. We have a pool that reaches to the middle of our garden and they have a creek that has no end. We have imported lanterns in our garden and they have the stars at night. Our patio reaches to the front yard and they have the whole horizon.

“We have a small piece of land to live on and they have fields that go beyond our sight.

“We have servants who serve us, but they serve others. We buy our food, but they grow theirs.

“We have walls around our property to protect us, they have friends to protect them.”

The boy’s father was speechless.

Then his son added, “Thanks Dad for showing me how poor we are.”

This is the reason my mother always said she was poor growing up but didn’t know it. My family had each other, a roof over their heads and enough to eat. My Nana made all of their clothes and they were lucky enough to have 2 pairs of shoes (1 for school and 1 for church). In the summer they would play barefoot (I did too). As an adult I lived in the country and would lie on a pallet in the yard at night and look at the stars and fireflies. So very peaceful…no city lights…just me and the universe. ~ Kera
