I have literally been making these for years. They are so quick and easy and they help celebrate so many fun times. Depending on the event, I may have to double or even triple the recipe as they go so fast.

Prep Time: 15 min
Cook Time: None
A single recipe would be enough to dip around 75-80 cherries.

Ingredients:

  • 1 block of cream cheese (softened)
  • 1 cup powdered sugar
  • jar of or fresh cherries
  • 1 box of graham crackers

Directions:

  1. Blend together the cream cheese and powdered sugar.
  2. Grind the graham crackers using a manual food processor.
  3. Dip the cherries in the cream cheese mixture and then into the graham crackers.
  4. Serve

Questions:

Q: Should these be refrigerated after being made? I want to make them ahead of time and wonder how to store them?
A: Because they are made with cream cheese, they should be refridgerated when not being served.

I found some jumbo lump crab meat on sale at a local surf and turf grocery, so naturally I went and bought 2 pounds of it. Where I’m from, you always jump at the chance of finding good seafood on sale. The crab meat pieces were about the size of a quarter. I tried to keep them whole which made making the crab cakes challenging. Keeping them together as I formed the patties was a task but it was well worth it in the end. They were heavenly.

Serves: 6-8
Prep Time: 30 Min
Cook Time: 20 Min


Ingredients:

  • 2/3 cup mayonnaise
  • 5 egg yolks
  • 2 teaspoons lemon juice
  • 2 tablespoons Worcestershire sauce
  • 2 teaspoons Dijon mustard
  • 2 teaspoons black pepper
  • 1/4 teaspoon salt
  • 1/4 teaspoon blackening seasoning
  • 1/4 teaspoon crushed red pepper flakes
  • 1/2 cup crushed, chopped parsley
  • 2 1/2 cups breadcrumbs
  • 2 lbs crab meat

Directions:

  1. Mix all ingredients together.
  2. Make into 4 oz. patties
  3. Coat with flour and fry in 1 inch of oil until golden brown.
  4. Serve

You can finish with a fresh squeeze of lemon or even top with with curry mango aioli!

Ingredients:

  • 1/2 cup graham cracker crumbs
  • 1/4 cup salted pretzels, crushed
  • 1/4 cup granulated sugar
  • 1 tablespoon cocoa powder
  • 1 1/2 ounces (3 tablespoons) unsalted butter, melted and cooled
  • 12 ounces cream cheese, room temperature
  • 8 ounces creamy peanut butter
  • 4 ounces powdered sugar
  • 1/2 teaspoon kosher salt
  • 1 teaspoon vanilla bean paste
  • 1/4 cup salted dry roasted peanuts, finely chopped
  • 1 1/2 cups heavy cream
  • 1/2 cup small chocolate-covered rice balls or toffee pieces
  • 6 ounces dark chocolate
  • Special equipment: pop mold with sticks

Directions:

To make the crust, place graham crackers, pretzels, granulated sugar, and cocoa powder in a bowl and mix well. Add the cooled melted butter, mix, and set aside.

Place the cream cheese in a stand mixer with a paddle attachment. Mix on medium speed to soften the cheese, about 1 minute. Add the peanut butter, powdered sugar, salt and vanilla paste and mix at medium speed for 4 to 5 minutes, and then increase the speed to high for an additional 2 to 3 minutes. The mixture will become light and fluffy. Add the peanuts and mix just enough to incorporate the nuts. Scrape the mix into a bowl and set aside.

Clean the mixing bowl and add the heavy cream. With a whip attachment, whip the cream until slightly firm peaks. Be careful not to over whip. Fold one-third of the soft cream into the mixture. When the cream is folded in, continue with the remaining cream.

Fill a pastry bag with the peanut cream and pipe a small amount into each mold. Tap the mold to ensure the mixture drops to the bottom of the mold. Sprinkle the chocolate balls over the mix. Pipe more mix, making sure to tap again. Sprinkle some crust and repeat with the cream. Continue layering the chocolate balls and crust. Insert the pop sticks into the mixture three-quarters of the way into the pop. Freeze overnight.

Melt the chocolate and keep warm. To unmold the pops, dip the mold into hot water. Gently twist the sticks as you lift the pops out of the mold. Dip the pops one at a time into the warm chocolate allowing the excess chocolate to run back into the bowl. Place the pops on a pan and return to the freezer. The pops can stay for up to 2 weeks wrapped in an airtight container.

Chocolate Chip Cookie Martini

It is a crazy mix of chocolate chip cookies, chocolate ice cream and dark Jamaican rum.

Ladies and Gentlemen I give you…The Chocolate Chip Cookie Martini!

Ingredients

  • 1 oz. (30ml) Dark Rum
  • 1 oz. (30ml) Chocolate Liqueur
  • 1 oz. (30ml) Chocolate Milk
  • 4 Scoops Chocolate Ice Cream
  • Chocolate Syrup
  • 5 Chocolate Chip Cookies
  • Strawberry

Directions

  1. Pour all ingredients into a shaker filled half way with ice and shake vigorously for 10 seconds.
  2. Rim a martini glass with chocolate syrup.
  3. Strain the ingredients into the martini glass.
  4. Slice a chocolate chip cookie half way across, place on glass rim and serve.
